Crockpot Hawaiian Chicken

I've never been to Hawaii, but really hope to go some day.  I'm not sure how authentically Hawaiian this chicken is., but it sure is good!  And it cooks all day in the crockpot, which means it's super easy as well.  Other than the canned pineapple, I already had everything I needed for this recipe, which is always a plus in my book. I served this over rice and a side of brocolli and we had an amazing, easy and satisfying dinner!



Crockpot Hawaiian Chicken

4 boneless, skinless chicken breasts or boneless, skinless chicken thighs
1 (20 ounce) can pineapple slices or chopped pineapple, juice reserved
2 tablespoons brown sugar
2 tablespoons soy sauce
Juice from one lemon
½ teaspoon ground ginger
2 tablespoons cornstarch

Spray a slow cooker with non-stick cooking spray.  Place chicken in slow cooker and top with pineapple. In a small bowl, whisk together pineapple juice, brown sugar, soy sauce, lemon juice, ginger and cornstarch  until combined. Pour over chicken. Cover and cook on low for 4 to 5 hours or high for 2 ½ to 3 hours. Serve over rice.
