Grilled Naan Pizzas

Matt and I have been grilling a lot this summer...there are weeks where we eat dinner prepared on the grill 4 or 5 nights out of the week.  There is just something nice about preparing a meal outside in the warm weather.  Plus, it definitely keeps the house cooler when the cooking is done outside! One day I hope to have a nice outdoor kitchen complete with a preparation area, refrigerator, stovetop and huge grill.  For now, our grill on our deck will do!

A little while back I shared an idea for Pita Pizzas.  In the same spirit, I recently made these Naan pizzas.  Basically, I wanted pizza but didn't feel like making dough.  I love the frozen garlic Naan from Trader Joes, and had some on hand.  I added some pizza sauce, mozzarella cheese and fresh basil and voila!  Dinner was ready.  Feel free to add any toppings of your choice-I think vegetables and even chicken would go great on these.  As you can see from the pictures, I like a lot of cheese on mine! These reminded me a lot of English muffin pizzas that I used to make as a kid.


 

Grilled Naan Pizzas
1 (12-ounce) package Naan Bread
Pizza sauce, divided
1 1/2 cups grated or sliced fresh mozzarella, divided
Fresh basil

Lay the bread on a flat, transportable surface such as a plate, platter, or baking sheet. Spoon about 1/4 cup (more or less depending on preference) of pizza sauce on each round and spread it evenly with the back of the spoon. Top each with approximately 1/4 cup of the cheese. Top with fresh basil.
Grill over low heat until the cheese is bubbly and starting to brown, about 5 minutes.  Transfer to serving plates. 
*To bake the pizzas instead, put the oven rack in the lower 1/3 of the oven and preheat the oven to 400 degrees F. Bake until the cheese is bubbly and golden brown, about 6 to 8 minutes.
