Pinwheels

It has been beyond hot this summer! I can't wait for to fall to get here with cooler weather, football season and the gorgeous colorful leaves!  But for now, we are still dealing with temperatures in the 90s and higher. As much as I enjoy cooking. when it's as hot as it's been, the last thing I feel like doing is standing over a hot stove.  That's why I loved the theme of the most recent recipe swap-"Too hot to cook".  It has definitely been too hot to cook this summer and it doesn't look like we are getting a break anytime soon, so I am excited to get some more ideas for recipes that don't require a lot of heat.

I was given this recipe for Pinwheels from Cheese Curd in Paradise.  The great thing about pinwheels is that you can add whatever combination of ingredients that you like and/or have on hand. I decided to make the turkey, pesto and bacon pinwheels since they had ingredients that Matt and I both enjoy.  I ended up making them for lunch for just Matt and I and  we really liked the flavor of these.  It seemed like they would be better for a party, but given the timeline of the recipe swap, we didn't have another occasion to make these for.  We liked the flavors of these, and I think they would make a great wrap if you don't want to bother cutting them up into small pieces-I know I for one am terrible at keeping them together once I cut into them!


Turkey, Red Pepper, Bacon and Pesto Pinwheels

4 12 inch tortillas
8 ounces reduced fat cream cheese
2 1/2 tablespoons pesto
1 red bell pepper, seeded and diced
1 pound deli turkey
5 strips center cut bacon, cooked and chopped

Mix cream cheese and pesto in a small bowl.  Spread evenly on each tortilla. Layer quarter amounts of turkey, red pepper, and bacon. Fold in the sides of the tortilla and roll tightly from the bottom. If you are not serving them immediately, wrap tightly in plastic wrap and store in the refrigerator overnight. When ready to serve, remove the wraps from fridge, take off the plastic wrap and slice each wrap in half and then into 3/4-1 inch slices.

  2. Oooh that sounds lovely and so simple! I pack a plain turkey wrap for my husband to eat at work every day and I bet he'd love these to change things up. I mean really, who can say no to bacon??
