Baked Apples with Crumb Topping

Whatever your plans are for the near future, you must include making these little desserts as part of those plans.  These baked apples have become my new favorite dessert.  They are so easy to make and taste similar to an individual apple crisp.  I love that you can control how much you make so they are perfect to make for one or two people, or for a group.   I think they would be perfect for a small party or just cuddled up on the couch in front of the fireplace or tv.  I made them one evening and let them bake while we ate dinner-they came out perfect, and were even better when paired with some vanilla ice cream.

I knew we'd like these when I saw them on my friend Amy's website, but just how much we loved them was a bit of a surprise-they were beyond amazing! I love the texture of the warm apple with the cinnamon flavored crunchy oats on top.

This Christmas treats blog hop hosted by Meal Planning Magic has been so much fun, and while this might not be something you can make ahead of time and freeze, it is a great low-key dessert that is guaranteed to be a hit.  We all know the holidays get busy, and I also think this is a great dessert to throw together for last minute company.  I am looking forward to enjoying them while wrapping presents too!

Baked Apples with Crumb Topping

2 large apples, cut in half
2 tablespoons butter, melted
2 tablespoons brown sugar
2 tablespoons flour
4 tablespoons uncooked quick oats
1/2 teaspoon cinnamon
pinch nutmeg
cinnamon sugar

Preheat oven to 350º. Cut apples in half and remove core and seeds.  In a small bowl combine butter, brown sugar, flour, oats, cinnamon and nutmeg. Spoon on top of the apple halves and sprinkle with cinnamon sugar. Place on a cookie sheet and bake in the oven for 25-30 minutes.
