Hidden Kiss Cookies

It's Thursday which means it's time for another holiday treat!  If you're looking for a perfect cookie recipe that makes a ton of  delicious cookies, this is it. 

Every year, my friend Amy hosts her annual cookie exchange party for the holidays.  It's always a lot of fun-a group of girls getting together for lunch, wine and cookies-need I say more?  We are usually asked to bring somewhere between 2 to 3 dozen cookies so that everyone can take a few home with them.  That's where a recipe like this is perfect because it makes about 70 cookies.  I made these cookies last year and they were a hit with everyone-no wonder Melissa from I Was Born To Cook calls these "the best Christmas cookie ever!"

Hidden Kiss Cookies

4 sticks softened salted butter
1 cup granulated sugar
2 teaspoons vanilla extract
3 1/2 cups all-purpose flour
2 1/2 cups chopped walnuts
Approximately 70 Hershey Kisses, unwrapped
Confectioners sugar, for dusting (optional)

In a large bowl. Beat butter, granulated sugar and vanilla until fluffy.  Add flour and walnuts and mix until well combined.  Chill dough in refrigerator for at least 2 hours.

Preheat oven to 350 degrees.  Using about one tablespoon for each cookie, shape dough around each chocolate kiss.  Using your hands, form into a ball and place on ungreased cookie sheet.

Bake 10-12 minutes or until cookies are set but not browned on top.  Allow cookies to cool slightly before removing from cookie sheet and place on wire rack.  Allow cookies to cool completely and sprinkle generously with confectioners sugar, if desired.
