Lemon Brownies

I love chocolate, especially dark chocolate.  Usually if there is a choice of desserts, I go right for the one with the most chocolate.  Recently, though I've been finding that I love lemon desserts just as much, if not sometimes more, than chocolate ones.  I really love the lemon blossoms that I've made for years and I recently made those lemon crinkle cookies which instantly became a favorite.  So, for the most recent recipe swap, I was thrilled when I got the recipe for these Lemon Brownies from Sweet Beginnings
This "brownie" is really a bit more cake like with a delicious lemon glaze on the top.  I actually added a little more lemon to the cake part, because I really like the flavor of lemon.  If you do like lemon, you will love this dessert!

Lemon Brownies

1 1/2 cups flour
1 1/2 cups sugar
1/2 teaspoon salt
1 cup unsalted butter, softened
4 eggs
2 tablespoons lemon juice (I added 3 tablespoons)
2 teaspoons lemon zest (I added 3 teaspoons)
For the glaze:
1 cup powdered sugar
2 tablespoons lemon juice
1 teaspoon lemon zest

Preheat oven to 350 degrees and line a 9x13 baking pan with foil, leaving enough over the edges so that you can use to easily remove the final product from the pan. Spray foil with cooking spray.

In a large bowl or stand mixer fitted with the paddle attachment, combine the flour, sugar and salt. Slowly incorporate the softened butter, mixing on low speed until just combined.

In another bowl, whisk together the eggs, lemon juice and lemon zest. Pour the mixture into the flour mixture and stir until well incorporated.

Pour the mixture into the prepared baking pan and bake for 25-30 minutes, or until a toothpick inserted in the center comes out clean.

Remove and let cool completely in the pan then glaze.

Prepare the glaze by mixing the ingredients (powdered sugar through lemon zest) together in a medium bowl. Once the brownies are cool, pour the glaze over the top of the brownies and gently spread with a spatula to evenly coat. Allow it to set (firm up), then remove the brownies from the pan (using the overhanging foil), and cut into squares.  Store in the refrigerator for best results.
