Chicken Burgers with Garlic Rosemary Mayo



It was recipe swap time again, and this time it was Blogger's Choice-meaning I was given a blog and got to make whatever looked good to me.  This time I was given The Jey of Cooking and finding just one recipe to make was easier said than done because I really like just about everything on her blog!  I ended up bookmarking a ton of recipes and choosing these chicken burgers on a whim one night.  We really like chicken burgers in our house-and what's not to love-they are juicy, delicious, full of flavor and healthy. 

When I was making these, I was a little skeptical because the chicken burger itself is just the ground chicken meat and salt and pepper.  Usually I like to season the patties pretty well, but I went ahead and stuck to the recipe.  Let me tell you-these burgers don't need anyrhing else because the mayo is so full of flavor!  Rosemary is a very flavorful herb and definitely provides a wonderful taste so you don't need to season the burgers.

This meal came together in almost no time at all-I was able to make the mayo while Matt was grilling the burgers.  And it tasted great.  I am so happy that I found another chicken burger recipe to add to our rotation!




Chicken Burgers with Garlic Rosemary Mayo

For the mayo:
1 cup light mayonnaise
1/4 cup fresh rosemary, finely chopped
3 cloves garlic, minced

For the burgers:
1 pound ground chicken
1/2 teaspoon Kosher salt
1/4 teaspoon fresh ground black pepper
4 sanhamburger buns
1 cup arugula, divided

Preheat grill to medium-high.

In a small bowl, combine the mayonnaise, garlic and rosemary.  Set aside.

In a large bowl, combine the ground chicken, salt, pepper and 1/2 cup of the garlic rosemary mayonnaise mixture until well combined.  Shape into 4 equally sized patties.

Grill for 6-7 minutes per side, or until burgers are cooked through.  Transfer to a clean plate and let rest for a few minutes.

Meanwhile, spread 1 teaspoon of the garlic rosemary mayo onto the cut side of each roll.  Toast or grill until golden brown.

To assemble the burgers, spread a dollop of the mayonnaise on each side of the toasted buns.  Add the arugula to the bottom bun, then the patty.  Top with the top half of the bun.

  1. These sound great. Always handy that with teamwork a meal comes together so quickly. The mayo sounds fantastic. I'll have to put this on our list of burgers to try!
