Sausage and Peppers in the Oven

This is perfect for a quick and easy weeknight meal.  I really like how versatile this recipe is-sometimes I serve this with some pasta and marinara sauce, sometimes we eat it on bread and sometimes with some roasted potatoes.  I think it's even filling enough to stand alone. Plus, you can make as much or as little as you like-so this recipe is great for a dinner of 2 or for a crowd.

In the summer, we like to grill sausage and peppers outside but this recipe is perfect in the winter and cooler months.   I tend to use only spicy sausage because that is what we prefer, but use whatever combination of sweet and spicy that you like.




Sausage and Peppers in the Oven

8 sweet Italian sausages
8 hot Italian sausages
10 Italian frying peppers, cored, seeded, and halved
2 large onions, thinly sliced
6 garlic cloves, lightly smashed
Salt and pepper, to taste
1/4 cup olive oil

Preheat the oven to 400F.

Place sausages in a roasting pan. Add the peppers, onions, garlic, and salt and pepper. Drizzle with olive oil.
Roast the sausages for approximately 1 hour, turning occasionally, until they are nicely browned. Arrange on a platter and serve.
