Salisbury Steak

As I mentioned last week, this time of year is absolutely hectic so getting dinner on the table can be a challenge. At the same time, this cold weather makes me crave comfort food .  Unfortunately comfort food often means lots of work in the kitchen.  That is why I really love this recipe for Salisbury steak-it came together in about 20 minutes, so it's perfect for a cold winter weeknight! 

While we were eating this, Matt and I both came to the conclusion that the only Salisbury steak we ever had in the past was in the form of TV Dinners.  You know, those trays of microwavable meals that are divided up into sections-usually a meat in one, mashed potatoes in another, a veggie in another section, and then sometimes if you are lucky a dessert like a brownie or warm apples in the other?  We had a lot of fun reminiscing about things like that when eating this dinner. I'm happy to say that this version of Salisbury steak tastes better than those TV Dinner versions, has much less sodium, and still comes together super fast-the perfect comfort food in my book!  I served the steaks with mashed potatoes and steamed broccoli and it really seemed to hit the spot.

Salisbury Steak

1 lb ground beef
1-2 Tablespoons Worcestershire sauce
1 small onion, finely chopped
Salt and pepper, to taste
Olive oil
1 8 ounce package sliced small white mushrooms (I used mini portobello)
2 Tablespoons butter
2 Tablespoons all-purpose flour
2 Cups beef broth

Combine beef, Worcestershire, onion and salt and pepper. Form into 4 patties.  Store in refrigerator until ready to use.

Heat oil in a large nonstick skillet over medium high heat.  Add meat patties and cook about 6 minutes on each side until meat is evenly caramelized on the outside and juices run clear. Transfer to a plate and cover to keep warm.

Add 1 tablespoon of olive oil and butter to the pan, then the mushrooms. Season mushrooms with salt and pepper and saute mushrooms until tender, 3 to 5 minutes. Stir in flour and cook 2 minutes more. Add broth, bring to a simmer and let gravy simmer for a few minutes until slightly thickened.

To serve, pour gravy over Salisbury steak. Serve with desired sides.
