Shrimp Tacos with Jalapeno Ranch Sauce

Even though Labor Day has come and gone and the evenings are getting a nice chill in the air, I still love using the grill for both convenience and the yummy things that can be made on it. The shrimp for these tacos can be cooked on the grill or inside (an indoor grill pan or roasted in the oven would both be my choice) but grilling them outside seemed like the way to go to extend summer just a little...

We both really enjoyed these tacos-Matt found them a bit too spicy and requested that next time I use only half of a jalapeno. I, on the other hand, added extra hot sauce to my tacos-so be sure to adjust the spice level to your liking.




Shrimp Tacos with Jalapeno Ranch Sauce

1 pound shrimp, peeled and deveined
Olive oil
Juice of one lime
Chopped garlic
Chili powder or cayenne pepper
1 jalapeno, roasted, peeled and seeded
1 packet ranch dressing mix
1 cup sour cream
Flour tortillas
Shredded lettuce
Diced tomatoes
Shredded Monterey Jack or cheddar cheese
Your favorite hot sauce

Combine shrimp, olive oil, lime juice, garlic and chili/cayenne in a bowl. Marinate shrimp for up to 30 minutes. Cook shrimp (on a charcoal grill, if possible).

While shrimp is marinating, combine jalapeno with ranch dressing mix and sour cream in a food processor or blender and blend until smooth. Warm the tortillas while the shrimp are cooking.

To assemble: smear some sauce on a tortilla, then top with shrimp, shredded lettuce, tomatoes and cheese. Drizzle with extra sauce and a few drops of hot sauce, if desired.

  3. Shrimp is a staple at our house...when I can't figure out what to cook/eat, somehow shrimp ends up on the table (I keep the frozen bags on hand). This is a great idea - sounds delicious!
