The buttermilk makes the chicken incredibly juicy and the garlic and herb marinade really flavor the chicken so even though this recipe has so few ingredients you end up with an incredibly flavorful meal. I would highly recommend this chicken for a quick weeknight dinner or as an addition to any get together or picnic this summer!
Grilled Buttermilk Chicken
2 cups buttermilk
5 garlic cloves, peeled and smashed lightly
1 cup fresh chopped rosemary or thyme
Kosher salt and freshly ground pepper, to taste
1-1.5 pounds chicken thighs and/or drumsticks
Place chicken in a large Ziploc bag. Add in buttermilk, garlic, herbs and salt and pepper. Make sure chicken is completely coated. Refrigerate for at least 4 hours or overnight, turning chicken occasionally. Remove chicken from refrigerator 30 minutes before grilling.
Heat grill to medium and if desired, lightly brush grates with oil. Remove chicken from marinade, and shake chicken of any excess liquid. Grill chicken for 10-15 minutes on each side until completely cooked through.

ReplyDeleteI love a simple main course idea too. This looks incredibly easy. I think buttermilk is the best "secret" ingredient. It works its magic somehow.
