Spicy Honey Chicken Thighs


Don't you think that sometimes dinner just gets in the way?  You have a million things to do and the last thing you want to do is make dinner, especially one that takes time.  Ordering out takes forever in our house because we can never decide what to order, then have to wait even longer for the food to come. Instead, I love meals like this that come together in almost no time at all and use ingredients that I tend to keep on hand.

All you do for this chicken is quickly season the chicken with some delicious spices, cook it for a bit, make the honey glaze, cook it some more and it's done in under 15 minutes.  I like to serve this with a simple salad or whatever leftover vegetables I might have.

This chicken is not overly spicy, but definitely has some heat to it, so if you don't like the spice at all, you can cut back on the chili powder and cayenne pepper.



Spicy Honey Chicken Thighs

1 teaspoon garlic powder
1 teaspoons chili powder
1/2 teaspoon Kosher salt
1/2 teaspoon cumin
1/2 teaspoon paprika
1/4 teaspoon cayenne pepper
4 boneless, skinless chicken thighs
3 tablespoons honey
1 teaspoon cider vinegar

Cooking spray


Preheat the broiler and spray a broiler pan with cooking spray.
Combine first 6 ingredients in a large bowl. Add chicken to bowl; toss to coat. Place chicken on the prepared broiler pan and broil for about 5-10 minutes on each side, until chicken is just about cooked through.
Meanwhile,.combine honey and vinegar in a small bowl, stirring well. Remove chicken from oven; brush 2 tablespoons honey mixture on chicken. Broil 1 minute. Remove chicken from oven and turn over. Brush chicken with remaining honey mixture. Broil 1 additional minute or until chicken is done.

  2. I love chicken thighs since they are so juicy. Love the idea of this simple glaze. Looks so easy and perfect on a weeknight when we're pressed for time!

  3. My fiance and I have chicken quite frequently during the week and I am always looking for new ways to make it. I love the honey and spice here! It's so simple, but with a huge flavor punch. :)
