Hawaiian Chicken Sandwiches

I am so excited to share the recipe for this delicious and easy sandwich!  I first saw this on So Tasty, So Yummy and the recipe definitely sparked my interest.  Then when I saw it on A Taste of Home Cooking, and heard nothing but rave reviews about it, I knew I just had to make it.  I can honestly see how this is going to become a staple in our house-I've already made these sandwiches twice in the past the month! I knew they would be good but I had no idea just how good they were going to be! Besides being absolutely wonderful-marinating the chicken overnight makes these sandwiches so moist and flavorful and the sweetness of the pineapple sends these sandwiches over the top-this recipe could not be easier! 


 Hawaiian Chicken Sandwiches

2 large boneless skinless breasts of chicken
1 can pineapple rings (4 rings)
2 tablespoons soy sauce
2 tablespoons brown sugar
2 teaspoons Dijon mustard
4 slices provolone cheese or desired cheese of your choice
4 hamburger buns
 Mayonnaise, for the buns, if desired

Pound out the chicken breasts until they are evenly thin (about 1/4-1/2 inches). Combine the juice from the pineapple can, soy sauce, brown sugar and mustard in a large bowl. Add the chicken and coat chicken with marinate.  Place bowl in the fridge and marinate the chicken overnight.

Prepare your grill. Grill the chicken for 15 minutes, flipping once halfway through. Add the cheese when about 3 minutes are left.

While the chicken is grilling, add the pineapple rings halfway through, turning once. Smear some mayo on the buns, then top with a piece of chicken and two pineapple rings each.

Makes 2 sandwiches.

  1. Hawaii is where I hope to retire, and this burger makes me think about all the wonderful vacations I've taken there. Yum!
