This winter has been crazy here-it seems like every week the temperatures go from 20 degrees for a high on one day to the mid 70s the next day. We have yet to see a significant amount of snow but we have definitely had some pretty cold days and nights here. As much as I love this warmer weather, I do occasionally look forward to cold evenings so I have an excuse to make some good old fashioned comfort food. Meatloaf is great on those cold nights and I love changing it up to prepare it in different ways.
We really like barbecue flavored dishes in our house, so needless to say we really enjoy this version of meatloaf. I like to make it with ground turkey instead of ground beef, but either works well here. If you're in a rush, it's okay to use bottled barbecue sauce if you have one on hand that you really like.
Barbecue Meatloaf
1-1.5 pounds ground turkey
1 cup fresh bread crumbs
1 onion, diced
1 egg, lightly beaten
1 1/2 teaspoons salt
1/2 teaspoon pepper
2 (8-ounce) cans tomato sauce
3 tablespoons vinegar
3 tablespoons brown sugar
2 tablespoons Dijon mustard
2 tablespoons Worcestershire sauce
1/2 cup water, to thin sauce if necessary
Preheat oven to 350 degrees F.
To make the meatloaf, mix together the ground meat, bread crumbs, onion, egg, salt, pepper, and 1/2 cup of the tomato sauce. Form this mixture into a loaf and place it in a shallow pan.
To make the barbecue sauce, combine the remaining tomato sauce, vinegar, sugar, mustard, Worcestershire and the water (if too thick). Pour this sauce over the meatloaf. Bake for 1 hour, basting every 20 minutes or so with the pan juices.
