Grilled Barbecue Chicken Pizza

An all-time favorite dinner in our house is barbecue chicken pizza.  We probably make it about once a month because we like it so much.  This past weekend, Matt and I decided to try to make it extra special and made it on the grill.  The result was nothing short of delicious-we couldn't stop eating it!  This is another dinner that I can't wait to make (and eat) again and again! 

We honestly don't follow a recipe for the toppings for this pizza, but rather put on the toppings based on what we think looks like a good amount.  We really think that using the spicy pepper jack cheese makes a big difference in the flavor.  You can either use your own recipe for a barbecue sauce (I am still working on perfecting mine!) or use your favorite bottled barbecue sauce.  Matt and I really like Sweet Baby Rays-especially the Original, Honey, and Hickory & Brown Sugar flavors.

Barbecue sauce
Grilled or Rotisserie chicken, shredded
Pepper jack cheese, shredded
Green bell peppers, diced
Yellow onion, chopped

Heat grill.  Roll and stretch each dough ball into a rough 8-inch circle and place them all on baking sheets. Lightly brush top side of dough with olive oil.

Place the pizzas directly onto the grill (oil side down) and cook on 1 side for 1 minute. Turn the pizzas over onto a clean baking sheet or platter and spoon on desired amount of barbecue sauce. Top the pizzas with desired amount of chicken, peppers, and onions.  Lastly, top with desired amount of cheese.  Carefully put pizzas back on the grill, close the lid and cook for 5 minutes more, until the crust is crisp and the toppings are cooked.
