Mediterranean Couscous

Sometimes we all need something quick and simple for dinner but don't want the extra calories and sodium that often come with meals that fit those categories.  This recipe is great for those kind of nights-it's light and delicious, and takes almost no time at all to prepare. My favorite part of this recipe is that you can make any substitutions you want and it will still taste great-feel free to omit any of the cheeses or vegetables you don't have on hand and add in any that you do.  Also, if you don't have chicken broth on hand, water works great as well.  For an extra special taste, you can also add some white wine. 


Mediterranean Couscous1 cup couscous
1 3/4 cup chicken broth
3/4 cup chopped cooked chicken
2 cloves of garlc, minced
1/2 yellow onion, chopped
1/4 cup chopped olives
1/2 cup chopped tomatoes
1/3 cup grated parmesan cheese
2 tablespoons chopped fresh basil or parsley
2 tablespoons olive oil
salt and pepper

Bring broth to a boil in a medium saucepan; stir in couscous. Remove from heat; cover and let stand 5 minutes. Fluff with a fork. Add chicken, vegetables, cheese, and other ingredients. Season to taste with salt and pepper and serve.
