Grilled Lemon Parsley Pork Chops

Now that the weather is warmer, I am loving the fact that we can use the grill to make lots of different foods. To me, nothing quite says spring and summer like the taste of food right off the grill.  We like to grill quite a bit so I am sure I will be posting lots of grilled recipes over the next few months.

This recipe is really simple but so good.  I was also excited to try this recipe because it gave me a chance to use some of the parsley I planted not too long ago.  I think the pork is a nice change from chicken but if you prefer to use chicken, I think that would be really good too. 


Grilled Lemon Parsley Pork Chops
Juice from 1 lemon
2 tablespoons chopped fresh flat-leaf parsley 
1 clove garlic, minced
coarse salt and freshly ground pepper
2 tablespoons olive oil
4 pork chops (I used boneless)

Combine lemon juice in a small bowl with parsley, garlic, 1/2 teaspoon coarse salt, and 1/4 teaspoon ground pepper. Set aside.

Season pork chops on both sides with salt and pepper and coat lightly with olive oil. Grill until pork is cooked through, 8 to 10 minutes. Transfer pork chops to a platter or serving plates and drizzle with lemon-parsley mixture.
