Raspberry Smash

Lately Matt and I have been experimenting with different cocktails on weekends.  We usually tend to drink wine with dinner, and Matt sometimes will have a beer either before or during dinner. We decided that adding a cocktail or two into the mix would be a nice change.  In addition to common drinks like Gin and Tonics or Margaritas, we like to try different combinations and see what we get.  This recipe is one of the first we tried and we both really liked it-it's definitely refreshing and easy to drink!




Raspberry Smash

2 lime wedges
Sugar (for rims of the glasses)
1/2 cup raspberries, fresh or frozen
6 tablespoons vodka
4 teaspoons sugar
1 1/2 cups ice cubes
1/4 cup chilled Champagne or Ginger Ale

Run a lime wedge around the rims of 2 old-fashioned glasses. Dip rims in sugar. Place both lime wedges, raspberries, vodka, and 4 teaspoons sugar in cocktail shaker; using a muddler or wooden spoon handle, smash the fruit mixture. Add ice; shake for approximately10 seconds. Pour into glasses (do not strain), top with Champagne or Ginger Ale, and serve.
